Halloween Cookies
It’s the middle of Spooktober so you know what that means - Halloween recipes and activities! This recipe comes from South Australian Artisan Baker Cindy Rayson, who has kindly given us permission to share her spooky secrets to the perfect halloween cookies!
The recipe is as follows:
Ingredients
For the cookie base:
185g butter
1 cup caster sugar
1 1/2 tsp vanilla extract
2 1/2 cups flour
2 whole eggs
For the icing:
1 cup powdered sugar
2-3 tablespoons milk
1 teaspoon vanilla extract
Food colouring (of your choice - but orange for pumpkins!)
Steps:
In a large bowl, whisk together butter and sugar, until fluffy and light in colour.
Mix in eggs and vanilla, followed by the flour.
Pour the mixture into a lightly floured tray and use your hands to form the mixture into a ball. Cover with plastic wrap and place in the frige for half an hour.
Roll out the cookie dough and cut into your desired shapes (pumpkins, ghosts, or bats make for fun shapres!) and place on baking tray.
Place into oven (200 degrees Celcius, fanforced) for about 10 minutes or until cookies are golden brown in colour.
Wait for the cookies to cool down, then enjoy your Spooky cookie creations!
